Vanilla Custard

Ingredients

  • 4 cups heavy cream
  • Seeds from 1 Grade-A vanilla bean pod
  • 1 teaspoon butter
  • 4 large eggs
  • ½ cup cane sugar
  • 3 tablespoons organic cornstarch

Directions

  • Whisk eggs, sugar, and cornstarch together in a bowl until the sugar dissolves.
  • Place heavy cream, vanilla bean seeds, and butter in a saucepan. Bring liquid to a simmer over medium heat (DO NOT BOIL).
  • Slowly pour in egg mixture, continuously whisking, until custard is thick enough to coat the back of a spoon (5- 12 minutes).
  • Pour the custard into serving dish(es) and place plastic wrap directly on the surface of the custard, leaving no space between the plastic and custard.
  • Refrigerate the custard for 3-4 hours (overnight is best) before serving.
  • Finish with pistachios and a lace chocolate.
